After that, the pace is yours. Most dinner dates run to about three hours, with an aperitif, a few courses nobody hurries and a coffee or nightcap to finish. If the conversation still has somewhere to go, the evening can continue, provided the extension is confirmed on WhatsApp first.

Oud-Zuid does white tablecloths within sight of the Concertgebouw, while West hides some of its best cooking in former industrial halls. In summer the light lasts until late and the terraces by the Amstel stay busy long after the plates are cleared; in winter the canal ring glows and a warm bar is never more than a bridge away. Others go straight on to a night out with music and cocktails. If you already know you want more than dinner, say so when you book, and we will confirm the complete plan in one go instead of piecing it together at midnight.
